Just like with everything chocolate, the difference between each type of cocoa powder is the main ingredients and the fat content in each cocoa powder. The fat content usually won’t effect the consistency of your final product, but can effect the taste. So it’s better to know before you bake to ensure you get the quality and taste you’re looking for.
